In this study, the drying of nance pulp (Byrsonima crassifolia (L.) Kunth) was analysed using a lab-scale convective tunnel dryer. The experiments were conducted at three different temperatures (60, 70, and 80 °C) and at an air velocity of 2.0 m/s. During the drying process, the moisture content ratio decreased continuously over time. The entire drying process occurred during the falling rate period. It was observed that the nance pulp experienced shrinkage during the drying process. The experimental drying data were fitted to six (6) thin-layer models from the literature. The results indicated that the models proposed by Midilli et al. and Alonso et al. provided the best fit for the experimental data compared to the other models evaluated. Furthermore, the effective moisture diffusivity of the nance pulp was found to range from 2.484 to 4.041 x10-9 m²/s at the tested temperatures, and the activation energy was calculated to be 23.62 kJ/mol.
